ULTIMATE CHEESY NACHOS RECIPE

Serves 2
Ingredients:
-tortilla chips
Nacho Cheese Sauce:
-1 cup grated cheddar cheese
-1.5 tablespoons cornflour
-1/2 teaspoon onion powder
-1/2 teaspoon garlic powder
-salt
-1.5 cups milk
-1-2 teaspoons jalapeño brine
-sriracha or hot sauce
-pinch turmeric or yellow food colour (optional)
-1-2 tablespoons cream
Sour Cream/Crema:
-2 tablespoons cream
-squeeze of lemon
-salt
Spicy Beans:
-1/2 cup boiled red kidney beans or black beans
-salt
-1/4 teaspoon onion powder
-1/4 teaspoon garlic powder
-1/4 teaspoon ground cumin
-pinch red chill powder
-1 tablespoon oil
Toppings:
-tomato, deseeded & chopped
-spring onion, thinly sliced
-pickled jalapeños, sliced/chopped
-black olive, sliced
-fresh coriander leaves
CRISPY SMASHED TACOS RECIPE
INGREDIENTS:
-4 (6”) soft flour tortillas
-grated cheese (dairy or non-dairy)
(I used cheddar + pepper jack)
Filling:
-2 tablespoons oil
-1 cup finely chopped fresh button mushrooms
-3/4 cup finely chopped mixed bell peppers (red, orange, yellow)
-2 cloves garlic (grated)
-1 teaspoon tomato paste
-taco seasoning (recipe below)
-2 tablespoons walnuts (pan-toasted & powdered)
-1 cup boiled or canned red kidney beans or canned black beans
(if using canned beans, drain & rinse well)
-a few dashes vegan Worcestershire sauce
Taco Seasoning:
-1/2 teaspoon onion powder
-1/2 teaspoon garlic powder
-1/2 teaspoon chipotle (or smoked paprika)
-1/4-1/2 teaspoon paprika or chilli powder
-1/2 teaspoon cumin powder
-1/4 teaspoon salt
-1/2 teaspoon dried oregano
To Serve:
-pico de gallo (deseeded chopped tomato + chopped green or red onion + chopped coriander/cilantro + fresh lime or lemon juice + salt
-thinly shredded iceberg lettuce or purple/red cabbage
-crema (2-4 tablespoons cream + a squeeze of fresh lime or lemon juice + salt)
QUESADILLA RECIPE
Makes 2-3 quesadillas
INGREDIENTS:
-1 tablespoon oil
-1 tablespoon butter
-1 tablespoon finely chopped garlic
-1 tablespoon tomato paste
-1/2 teaspoon red chilli powder
-1/2 teaspoon cumin powder
-salt
-1 cup boiled red kidney beans
-1/2 cup finely chopped green pepper/capsicum
-2 tablespoons hot water
-1 cup sweetcorn
-1 teaspoon dried oregano
-2-3 (8” each) wholewheat flour tortillas
-1 cup grated cheddar cheese
-1 cup grated mozzarella cheese
-fresh coriander leaves, chopped
-spring onion greens, chopped
-salsa, to serve
-santa fe sauce, to serve (recipe below)
Santa Fe Sauce:
-1 tablespoon mayonnaise
-2 tablespoons cream
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/2 teaspoon cumin powder
-1/4 teaspoon chilli flakes
-salt
-fresh ground black pepper
-1/4 teaspoon dried parsley
-1/4 teaspoon dried dill
-1 teaspoon jalapeño brine or white vinegar
-1 teaspoon milk
-a few drops liquid smoke
