Lamingtons are the perfect sweet snack for morning or afternoon tea! Soft and fluffy with a rich burst of chocolate flavour.

The sponge cake centre is one of the easiest cakes you’ll make - no fancy mixer (OR even hand beaters) required! Plus it’s so much fun to roll each piece in the chocolate sauce and coconut!

While store-bought lammys may be taller or impossibly fluffy, we find the homemade ones just taste better. And you know exactly what went into them – real ingredients!

You will need:

125 g caster sugar / superfine sugar 3/4 cup / 4.4 oz
50 g butter salted, softened
2 eggs beaten (this recipe uses 60 g / 2.1 oz eggs - if yours are smaller, the batter might end up a bit too thick, so you can add a splash of milk to thin it out.)
120 g self raising flour / 1 cup
85 g desiccated coconut / 1 cup

For the chocolate sauce:
2 tbsp cocoa powder
150 g icing sugar / powdered sugar / 1 cup
3 tbsp boiling water
1 tbsp butter melted
