Let's Cook: Stefan's Comfort Soup

This is an Asian flavored noodle soup I do using ramen and udon noodles. I usually make it for Robyn and it's never the same each time I make it. Different vegetables can give different flavors and textures so feel free to experiment as much as you wish.

Grocery List:

1 medium - large onion, chopped
4-6 shallots, minced
3 cloves garlic
1 tbsp chili garlic sauce
2 1L Campbell's Pho Broth
1L water (may need more while cooking, do not let it reduce too much)
ginger root, 5-6 large pieces/slices
cauliflower, 1/4 head broken into smaller pieces
1 large package shiitake mushrooms (any mushroom)
1 large package king oyster mushrooms (any mushroom)
3-4 baby bok choy, washed and leaves separated
1 package udon noodles
1 package ramen noodles (not the cheap 4/$1.00 kind)
broccoli, 1/2, chop off stems, use florets
1 package julienne carrot, use about 1/4 package
1/4 beef, no fat, sliced as thin as possible (pour hot borth over beef to cook)

Seasoning (may have to add more of either of these, taste to make sure, season to your liking)
salt & pepper to season
2 tbsp cooking sherry
2 tbsp soy sauce
1 tbsp. sesame oil (100% pure, NOT Blend)

Pork Belly Garnish:
4-5 slices pork belly
1 tbsp hoi sin
1 tbsp. minced garlic
sriracha sauce

2-3 eggs, boil, cut in half as garnish
3 green onions, sliced thin as garnish
