Blueberry Cheesecake Buns

Ingredients:
For the Dough:
• 3 cups (360 g) all-purpose flour
• 1/4 cup (50 g) granulated sugar
• 1 tsp (5 g) salt
• 1 package (7 g) active dry yeast
• 3/4 cup (180 ml) milk
• 1/4 cup (57 g) unsalted butter, melted
• 2 large eggs

For the Filling:
• 1 cup (225 g) cream cheese
• 1 large egg
• 2 tbsp (25 g) granulated sugar

For the Topping:
• Fresh blueberries (some whole, some lightly mashed)
• Sugar

For the Egg Wash:
• 1 large egg, beaten

Streusel Topping:
• 1/4 cup (30 g) all-purpose flour
• 2 tbsp (25 g) granulated sugar
• 3 tbsp (40 g) cold butter, grated

Instructions:
1. In a large mixing bowl, combine 2 cups (240 g) flour, granulated sugar, salt, and yeast.
2. In a small saucepan, heat the milk and butter until warm (about 120°F to 130°F / 49°C to 54°C). Add the warm mixture to the dry ingredients and mix on low speed using a stand mixer with the flat beater attachment.
3. Add the eggs and the remaining 1 cup (120 g) of flour. Switch to the dough hook and knead on medium speed for about 7–8 minutes, until smooth and elastic.
4. Transfer the dough to a greased bowl. Cover with a cloth or plastic wrap and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
5. While the dough rises, prepare the filling and toppings:
– Lightly mash some blueberries with sugar using a fork to create a jam-like mixture.
– Leave some blueberries whole for topping.
– In a medium bowl, mix the cream cheese, egg, and sugar until smooth.
– For the streusel, mix the flour and sugar with the cold grated butter until crumbly.
6. Once the dough has risen, punch it down. Transfer to a lightly floured surface and divide into 8–10 equal portions.
7. Shape each piece into a thick round bun and place them on a parchment-lined baking sheet, leaving space between each. Let rise again for 30 minutes to 1 hour.
8. Preheat the oven to 375°F (190°C).
9. Once risen, gently press down in the center of each bun to create a well. Brush the edges with egg wash.
10. Spoon a generous amount of cream cheese filling into each well. Top with a spoonful of mashed blueberries and add a few whole blueberries.
11. Sprinkle the streusel topping all over the buns.
12. Bake for 20–25 minutes, or until golden brown and the cheese filling is set.
13. Let cool slightly. Dust with powdered sugar if desired and serve warm.
