Bright fresh basil PESTO PASTA with easy homemade spaghetti noodles from the Phillips Pasta Maker. Yes, this damn pasta machine did outsmart me for a little bit, but we still found our way to fresh noodles! Making them much more than just a vessel to eat that PESTO! Obviously not the old fashioned way to making noodles, but if you’re in time crunch this is a great way to get some fresh pasta on the dinner plate. If you want that PESTO sauce a little creamier save some of the pasta water and add a little bit in incrimentally while mixing the pesto with noodles. Enjoy!

Pesto Pasta with Homemade Spaghetti
Cooking Time: 15 minutes
Serves: 4

INGREDIENTS:
For the Pasta
250 grams all-purpose flour
Pinch of salt
1 egg
Water

For the Pesto
½ cup macadamia nuts
4 cloves of garlic
2+ cups of fresh basil (washed and destemmed)
Juice from ½ a lemon
2 pinches of salt (add more if desired)
Fresh cracked pepper
1 cup parmesan cheese
½ cup high-quality olive oil (if possible) - plus more for drizzling

*** Disclaimer: A machine to make pasta will be required for this recipe, as well as a food processor. Please note that the pasta recipe may differ, depending on which brand of machine you use. When in doubt, consult the manual.

INSTRUCTIONS:
1. Based on the instructions provided by your pasta maker, assemble your ingredients and pray that everything works out with minimal technical difficulties. Be sure to keep your pasta well-floured while you set it aside to make your pesto.
2. For the pesto, start by adding your macadamia nuts to your food processor and giving them a few pulses to lightly chop them up. Don’t blend them too much. Add your garlic and pulse the contents again. Toss in your basil, lemon juice, salt, pepper, and parmesan cheese and give it a quick blend till most of it is incorporated. Slowly add your olive oil while the other ingredients are blending on low until you’ve reached your desired consistency.
3. Boil your water to cook your pasta. Fresh pasta cooks much faster than dried pasta you usually get in the store. For example, fresh spaghetti will cook in about a minute or even less, whereas store-bought spaghetti will take 8 to 9 minutes - so keep a close eye on it. Drain and rinse your cooked pasta - the cooler the temperature of your pasta, the more green and vibrant your pesto will be. Toss the noodles in some olive oil to avoid them sticking and mix that pesto right in. Dust the finished dish with some fresh parmesan and serve!
