INGREDIENTS :
2 cup rice flour
¼ cup Urad dhal/black split lentil (roasted & powdered)
2 tbsp butter
1 tsp red chilli powder
2 tbsp sesame seeds /til
pinch of ajwain (carom seeds)
1 tsp cumin seeds
some salt
METHOD:

Firstly, add 2 cups of water to a pot and wait until it reaches a rolling boil. When the water is heated, add 2 tbsp butter, mix well, and turn off the heat.
Next, add 2 cups of rice flour and mix well for 1-2 minutes. Cover the pot with a lid to trap the heat and steam inside for 10 minutes.
In a large mixing bowl, add steamed rice powder, roasted urad dal, roasted sesame seeds, chilli powder, salt, carom(ajwain) seeds, cumin, and some salt. Crumble and mix well until the flour is well combined.
Add water slowly and start to mix/knead the dough. Mix until smooth and soft dough adding water as required.
Now take star chakli mould and fix it to the chakli maker. Grease the chakli maker with some to prevent the dough from sticking to the mould. Fill it with the portion of the dough.
Furthermore, On a baking paper lined plate, slowly release the dough shape it into spirals and seal the ends so that it doesn’t fall apart while deep frying.
Next, take one chakli at a time and slide it into the hot oil. Do not disturb them for 1 minute until they become firm. Then flip the chaklis and fry on medium flame until they turn crispy.
Lastly, drain over a paper towel to remove excess oil and let it cool completely.
Store in an airtight container for 2 weeks.
