Vegan Ice Cream Sandwiches
Serves 4 | Prep 10 mins (+ 5 mins cooling time) | Cooking 15 mins

Ingredients:
100g Coles No Added Sugar Mylk Chocolate, chopped
4 slices Coles Nature’s Kitchen Banana Bread Slices
4 small scoops Coles Nature’s Kitchen Plant Based Cookies & Cream Frozen Dessert
⅓ cup (35g) walnuts, toasted, chopped

Method:
1. Place the chocolate in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Cook, stirring with a metal spoon, for 5 mins or until chocolate melts and is smooth.
2. Heat a chargrill over high. Cook the banana bread, in 2 batches, for 3 mins each side or until lightly charred. Set aside for 1 min to cool slightly.
3. Place 2 scoops of ice cream on top of 1 banana bread slice and spread with the back of a spoon to cover. Top with another banana bread slice to sandwich together. Repeat with remaining ice cream and banana bread.
4. Working quickly, drizzle melted chocolate over each sandwich. Sprinkle with walnut. Cut in half and serve immediately.
