Ingredients
2 cups all-purposed flour
2 cups hard/village flour
2 tbsp unsalted butter
2 tbsp sugar
1 baking dry yeast
Salt
Water – 2-3cups
1 ½ cup sesame pulp
1 ½ cup sugar
1 ½ tbsp cinnamon powder
1 1/2 tbsp honey

Procedure –
1 In a bowl mix the flour, sugar,yeast and butter.
2. Then, add in the salt, the water little by little until a soft non sticking dough Is formed.
3. In another bowl, mix the sesame pulp – tahini, sugar and cinnamon.
4. Roll out the dough into thin sheets and paste each sheet with the sesame pulp mixture.
5. Roll the sheets up to form long ‘ropes’ and curl each one to form a snail shaped round pie. Press the pies down a little, using your fingers.
6. Transfer them on a non-stick oven pan. Cover with a towel and allow to rise for 20 mins.
7. Paste their surface with honey, unthickened with little water and bake in a moderate oven for about 50 mins until golden brown. Tahini pies can be served either hot or cold.
