Potatoes are a staple in our house, and air-fries are my number one favorite way to eat them. Over the 15+ years that I've eaten a mostly plant-based diet, I've come to enjoy vegetables for any meal--and that includes breakfast! Where some people might think only oats, cereal, toast or smoothies are breakfast foods, I often find myself eating potatoes and veggies--and in this case--salad for my first meal of the day. If I can start my day with veggies, I find my day is filled with a lot more of them throughout the day. How about you--are you a veggie lover anytime of day?
