Achari Mathri is a traditional North Indian snack, often enjoyed with tea. Typically, Mathri is deep-fried, making it delicious but high in calories and less healthy. Baked Millet Achari Mathri offers a healthier alternative without compromising on taste, combining the crunch of the mathri with the tangy and spicy flavors of Indian pickles (achari).

Ingredients
Jowar (Sorghum) flour-1Cup
Jau (Barley) flour-1Cup
Achar masala (mango or any other)-2T
Baking Powder-1tsp
Salt-1tsp
Black Pepper-1tsp
Red Chilli powder-1tsp
Mustard oil-3T
Fennel seeds (saunf)-1T
Turmeric powder-1/2tsp
Water-To knead the dough

Procedure
1. In a large bowl, combine flour, achari masala, fennel seeds, salt, black pepper powder, red chilli powder, turmeric powder and baking powder.
2. Add mustard oil and mix until the mixture resembles breadcrumbs.
3. Gradually add water and knead into a firm dough. Cover and let it rest for 5 mins.
4.Preheat your oven to 360°F (180C).
5. Roll out the dough on a floured surface .
6. Use a flat knife to lift the mathri
7. Prick each mathri with a fork to prevent puffing up while baking
8. Place the mathris on a baking sheet lined with parchment paper. Bake for 8-10 minutes, until they are golden brown and
9. Let the baked mathris cool completely on a wire rack. Store in an airtight container to keep them crisp.
