CHINESE STEAMED LEMON CHICKEN

The delicious flavors are infused during the steam cooking. The chicken is juicy and tender. The sauce made from steaming is flavorful and delicious. You can use regular lemon for this recipe if you can't find Asian lemons.

1 lb. sliced chicken
3 tablespoons slivered ginger
6 Chinese mushrooms
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon chicken soup base
1 teaspoon cornstarch
1/2 teaspoon sesame oil
1 teaspoon light soy sauce
2 to 3 small Asian lemons (or 1 tablespoon lemon juice)

Slice ginger into slivers. Soak Chinese mushrooms for a least 2 hours. Slice mushrooms and be sure to cut out the hard stems. Cut Asian lemons into thin slices. If you can't find any Asian lemons, just add 1 tablespoon or less lemon juice into the chicken.

Put sliced chicken in a mixing bowl. Add salt, brown sugar, chicken soup base, cornstarch, sesame oil and light soy sauce. Mix well with a pair of chopsticks or a fork. Spread Chinese mushrooms, lemon slices and ginger on top of chicken.

Bring water in a pan to a boil. Put dish of chicken in pan and cover with a lid. Steam for 30 minutes. At the 20 minute mark, check to see if the chicken is cooked all the way through. Some pieces of chicken are sticking together and may still be raw. Separate these pieces of chicken and then cover with the lid again. Steam the chicken for the final 10 minutes. Serve with rice. I like to put some of the juices onto the rice. Enjoy!
