Chole Recipe – Ingredients & Method
Ingredients:
Oil – 2 tbsp
Ghee – 1 tbsp
Ajwain (Carom Seeds) – ½ tsp
Hing (Asafoetida) – A pinch
Onion (finely chopped) – 2 medium
Tomatoes (chopped) – 2 large
Green Chili (chopped) – 1-2
Chole Masala – 4 tbsp
Coriander Powder – 1 tsp
Red Chili Powder – 1 tsp
Black Pepper Powder – ½ tsp
Chaat Masala – ½ tsp
Amchur Powder (Dry Mango Powder) – ½ tsp
Besan (Gram Flour) – 1 tbsp
Water – As needed
Boiled Chickpeas (Chole) – 2 cups (boiled with tea leaves for color)
Salt – As per taste
Fresh Coriander Leaves (for garnish)
Method:
Heat oil and ghee in a deep wok or kadhai. Once hot, add ajwain and a pinch of hing. Let them sizzle for a few seconds to release their flavors.
Add chopped onions and sauté on medium heat until golden brown. This step is key to adding depth to the dish.
Add chopped tomatoes and green chili, mix well, and cook until the tomatoes soften completely.
Add chole masala, coriander powder, red chili powder, black pepper powder, chaat masala, and amchur powder. Mix well so the spices coat everything evenly.
Add besan (gram flour) and roast it for a minute until its raw smell disappears. This helps thicken the gravy and enhances the texture.
Pour in a little water and cook the spice mixture until everything blends into a thick, aromatic masala.
Add boiled chickpeas (chole) that were boiled with chai patti (tea leaves) for a deep color. Mix well.
Mash some of the chickpeas directly in the kadhai or cooker to thicken the gravy while keeping some whole for texture.
Add salt as per taste and let everything simmer for a few minutes so the flavors infuse well. Adjust water if needed.
Garnish with freshly chopped coriander leaves and bring it to a gentle boil.
Serve hot chole with puri, bhature, or rice and enjoy!
