Kala jamun is a popular Indian dessert closely related to gulab jamun, but darker in color and typically more dense. Unlike traditional gulab jamun, which is made using khoya or mawa, kala jamun often incorporates paneer (Indian cottage cheese) along with khoya. This combination creates a unique texture and flavor profile that sets kala jamun apart from its lighter counterpart.

Ingredients:

Mawa (Khoya): This is a concentrated milk solid obtained by reducing milk to a thick consistency. It gives the dessert its creamy texture and rich flavor.
Paneer: Paneer, or Indian cottage cheese, adds a distinct chewiness to kala jamun, providing an interesting contrast to the soft interior of the dessert.
All-purpose Flour (Maida): This is used as a binding agent to help hold the dough together.
Cardamom Powder: This spice provides a subtle aroma and flavor that complements the sweetness of the jamun.
Baking Powder: This helps the jamun to expand and achieve a light texture while frying.
Milk: Used to adjust the consistency of the dough.
Sugar: The primary sweetener for the sugar syrup in which the jamuns are soaked.
Water: Required to make the sugar syrup.
Saffron Strands and Rose Water: These add a delightful fragrance and a touch of color to the sugar syrup.
Ghee or Oil: For deep-frying the jamuns.
Preparation:

Making the Dough:
Crumble the mawa and paneer, ensuring there are no lumps. This step is crucial for a smooth dough.
Mix the crumbled mawa and paneer in a large bowl with a small amount of all-purpose flour, cardamom powder, and baking powder.
Add a little milk to create a soft dough. Be careful not to overwork the dough, as this can lead to dense jamuns. The dough should be soft and pliable.
Shaping the Jamuns:
Divide the dough into small balls, about the size of a large marble. Roll them gently between your palms to create smooth, crack-free balls. If there are cracks, they might break while frying.
Let the balls rest for a few minutes, allowing the gluten in the flour to relax.
Preparing the Sugar Syrup:
In a large pot, combine sugar and water. The ratio of sugar to water should be about 2:1. Bring this mixture to a boil and then reduce to a simmer.
Add saffron strands and a splash of rose water to the sugar syrup for fragrance and color.
Let the syrup simmer until it reaches a one-string consistency, indicating that it's thick enough to coat the jamuns without being too sticky.
Deep Frying the Jamuns:
Heat ghee or oil in a deep pan. Test the temperature by dropping a small piece of dough into the oil; if it slowly rises to the surface, the oil is at the right temperature.
Carefully add the jamuns to the hot oil. Fry them on low heat to ensure they cook through without burning. The low heat allows them to achieve the characteristic dark color.
Once the jamuns are deep golden brown or even slightly darker, remove them from the oil and drain on paper towels to remove excess oil.
Soaking in Sugar Syrup:
While still warm, add the fried jamuns to the sugar syrup. Allow them to soak for at least 30 minutes to an hour, ensuring they absorb the syrup and become soft and juicy.
The longer they soak, the softer and sweeter they become. Be sure not to overcrowd the pot, allowing the syrup to penetrate each jamun evenly.
Serving Suggestions:

Kala jamun is typically served warm, though it can be enjoyed at room temperature or even chilled. It is often garnished with crushed pistachios or almonds for a decorative touch and a hint of crunch. You can also serve it with a dollop of vanilla ice cream or rabri (thickened sweetened milk) for an extra indulgence.

Kala jamun is a delightful dessert that's perfect for special occasions, celebrations, or as a sweet treat after a meal. Its rich flavor and dense texture, combined with the fragrant sugar syrup, make it a favorite among dessert lovers.
