Prawns chutney is everyone's favourite - nothing beats the soft sweet prawns in a hot spicy tomato base, served with some hot hot roti! We don't make this often as Pranesh is mildly allergic to shellfish so avoids eating prawns or crabs but once in a while we do make it when we have some visitors over.

Ingredients
700g prawns, shelled, deveined and rinsed

Marinate
1 lemon for zest and juice
1 tbs soy sauce
grind of salt and pepper
1 thumb sized piece fresh ginger
6 cloves of garlic
1 tsp pure chillie powder
a handful of fresh thyme
splash of olive oil

For braising
generous cube of butter - adjust to preference
1 onion grated
3 green chillies
small handful curry leaves
1 tsp mixed masala
1 tsp hurdee (tumeric) powder
1 tsp salt
1/2 tsp sugar
6 tomatoes, grated
2 tbs tomato puree
1/2 tsp mustard seeds
1 tsp jeera (cumin) seeds
1 tsp dhania (coriander) seeds
dhania and spring onion to garnish

For a creamy chutney, add 3/4 cup coconut milk and allow to simmer gently for 5 minutes.

Serve with soft plain roti or mealie meal rotis:
