Saoji Dry Masala Recipe -    • Saoji Masala Recipe | सावजी सूखा मसाल...  



🌸Ingredients -

1 Kg - Mutton मटन
6-7 Tbsp - Oil तेल
2 Big - Onion प्याज़
5-6 - Garlic cloves (20 gm) लहसुन
2 Inch - Ginger (16 gm) अदरक
1/2 Cup - Coriander leaves (with stem) धनिया पत्ता और धनिया डंठल
2 Spinach leaves (Spinach will give a dark colour to mutton curry) पालक
1 Tbsp - Red chilli powder लाल मिर्च पावडर
1/2 Tsp - Turmeric powder हल्दी पावडर
Salt to taste नमक
Coriander leaves to garnish धनिया पत्ता
5-6 Cup - Water for gravy consistency पानी

🌸 Method -

*First, take 1 kg of Mutton in a big bowl. Add 2 lemon juice, mix well, cover it for 30 minutes, and after 30 minutes, Wash nicely; you can use this nicely washed Mutton then use making Mutton curry*

Take a Kadhai. Add 2 Tbsp oil, add Mutton(washed), 1 Tsp Ginger-garlic paste, and 1/4 Tsp Turmeric, and saute well for 10-15 min. Roast Continues Stirring light colour (All water evaporates from Mutton).
Take a pan.
Add 1 Tsp oil. Chopped onion, Roast dark brown colour,
Remove on a plate and cool down.
Take a mixer jar.
Add Roasted onion, ginger-garlic, Coriander leaves (with stem), Spinach, use a little water, and make a smooth paste.
**Take a Cooker.
🌸 Add 6-7 Tbsp oil, Onion smooth paste, saute well, add Saoji masala, saute well oil will separate from the masala.
Add red chilli powder, turmeric powder, and roasted mutton, and mix well together.
Cook for 5 min.
Add 5-6 cups water (Add 1 by 1 cup and mix well); salt to taste; cover the cooker lid, and pressure cook for 3-4. Whistle to cook the mutton nicely. OR (cook on simmer for 40-45 min), coriander leaves to garnish.



**SAOJI Dry MASASA - (For 1 kg Mutton, Chicken) 👇🏻

2 Tsp - Jeera (Cumin seeds) जीरा
7-8 - Elaichi (Green Cardamom Pods) हरी इलायची
2 - Black cardamom (Black Elaichi) काली इलायची
1 Tsp - Black peppercorns काली मिर्च
1/2 cut Jaiphal (Nutmeg) जायफल
2 - Javitri ( Mace) जावित्री
2 - Chakri phool (Star Anise) चक्र फूल
4 - Laung (cloves) लौंग
1 Tsp - Patthar/Dagad phool (Stone flower) दगड फूल/पत्थर फूल
1 - Dalchini (Cinnamon) 4 gm (दालचीनी)
1 Tsp - Saunf ( Fennel seeds) सौंफ
1 Tsp - Shahi Jeera शाही जीरा
5-6 - Tej patte ( bay leaf) तेजपत्ता
2 Tbsp - Khas-khas (Poppy seeds) खसखस
2 Tbsp - Sabut Dhaniya (Coriander seeds) साबुत धनिया
1 Tbsp - Jowar aata (Sorghum flour) जवार आटा
8-9 - Dry Red Chilies सुखी लाल मिर्च
50 Gm - Dry Coconut. सूखा नारियल
