Ginger Burfi/Candy is a unique sweet or more of a combo of spicy sweet. It is very easy to prepare at home as it requires just two ingredients with a simple process. But selection of ginger needs a bit of attention, otherwise using matured or young ginger will taste way too off from the real taste. It needs to be fresh and tender, so that it can be grinded to a fine paste as well as the fresh aroma can be retained in the process. Also, as shown, be attentive while stirring the mixture and maintaining the flame levels. Turning off the heat early may end up a semi solid form of candy and turning off the heat late may end up forming a solid mass of candy in the kadai itself!
