SRILANKAN JAGGERY ADA

2 1/2 cups All purpose flour Flour
300 grams grated jaggery
50 grams butter
11/2 cups thick coconut milk
2 Eggs
1/2 tsp yeast
1 tablespoonsugar
1/2 tsp Baking soda
1 tsp cardomom powder
Pinch of salt



Method
First proof the yeast

. In a small bowl add yeast and 1 tablespoon sugar and add 3 tablespoons warm water and mix it well and keep aside.

In a large bowl add all other ingredients and add coconut milk gradually and mix well and add the proofed yeast and mix again. Add more coconut milk if needed.

Add the batter to a blender. Blend it for a minute into a smooth batter.leave to ferment for one hour or more until the batter becomes double in size.

Pour into greased cup cake moulds and bake for 10-12 minutes on 350 F or 160 C
