This bit of industry slang has been around for nearly a century, but its exact origin is still debated. What’s certain is that “86” means to cancel, remove, or stop serving something, whether that’s a sold-out dish or a troublesome customer. So where did it come from? There are several competing theories: Prohibition-era bars (1920s–1930s): Some say speakeasies used “86” as a code to get rid of alcohol or customers quickly before a police raid. There’s no solid proof of this, but it fits the vibe of the time. Delmonico’s Restaurant myth: A long-circulated story claims that Delmonico’s in New York had 86 menu items, and when one ran out, they’d mark it as “86.” However, historians have found no documentation supporting this. Diner and soda-jerk slang: The most supported theory comes from the 1920s–1940s diner culture, where kitchen shorthand used numbers to mean specific actions. “86” meant “stop serving” or “out of,” possibly derived from the rhyming slang “nix” (meaning cancel). Military and bar slang crossover: In World War II, “86” was also used in the armed forces to mean “to get rid of” or “reject,” reinforcing its use later in hospitality. Today, “86” is universal in restaurants and bars, it means something’s gone, off the menu, or someone needs to leave. So if you hear “86 the chicken,” the kitchen’s fresh out!
