In this exciting episode of Mehboob’s Kitchen, Chef Mehboob presents two flavorful dishes from two different worlds:

🥘 Hyderabadi Mutton Qeema – A spicy, slow-cooked minced mutton dish enriched with desi spices and aromatic herbs — perfect with paratha or naan.
🌯 Pulled Beef Enchiladas – A Mexican classic with a meaty twist — tender shredded beef wrapped in tortillas, baked with spicy sauce and gooey cheese.

Don’t miss this East-meets-West combo, packed with bold flavors and culinary creativity!

🍽️ Recipes Covered:

Hyderabadi Mutton Qeema
Ingredients:
Mutton mince (hand chopped) ½ kg
Onion (sliced) 1 large
Ginger (chopped) 2 tbsp
Garlic (chopped) 1 tbsp
Mint (chopped) 3 tbsp
Yogurt 2 cups
Black cumin 1 tsp
Crushed green cardamom 6-8
Turmeric 1 tsp
Chilli powder 1 tbsp
Coriander powder 2 tbsp
All spice powder 1-1/2 tbsp
Salt 1 tsp
Oil ½ cup
Green chillies (sliced) 3
Crushed black pepper 1 tbsp
Method:
Heat oil in a pan then add onion and fry till light brown. Then add garlic and fry for a minute. Now add mince and fry for 5 minutes. Then add turmeric, chilli powder, salt, green cardamom and black cumin and fry for 2 minutes. Now add 1-1/2 cup of water and cook on low heat for 30 minutes. On high heat dry all the liquid and add yogurt, coriander powder, all spice powder and cook till almost dried. Then add black pepper and green chillies and fry for 2 minutes then serve.


Pulled Beef Enchiladas
Ingredients:
Beef (cooked & shredded) ½ kg
Small tortilla bread 1 packet
Cheddar cheese (grated) 1 cup
Mozzarella cheese (grated) 1 cup
Crushed red chilies 1-1/2 tbsp
Garlic (chopped) 2 tbsp
Onion (sliced) 1 large
Capsicum (sliced) 2
Salt 1 tsp
Oil 5 tbsp
Oregano 1 tsp
For Tomato Sauce:
Tomatoes 4
Tomato paste 5 tbsp
Oregano 1 tsp
Onion (sliced) 1 small
Salt 1 tsp
Garlic 1 tbsp
Method:
Heat oil in a pan. Add garlic and fry. Then add cooked beef, crushed red chilies, salt, oregano and fry for 5 minutes. Now add vegetables and fry for a minute. Remove and set aside.
For the sauce, add oil in a pan and heat then add onion and garlic and fry for a minute. Now add the remaining ingredients of the sauce to the pan along with 3 cups of water, bring to boil and cook on medium heat for 20 minutes. Remove, cool and grind. Now toast tortilla and spoon beef, cheese and sauce. Roll and place them in an oven proof dish. Then spoon sauce over and sprinkle cheese on top. Now bake in oven on 200 C for 10 minutes. Remove and serve.
