Bengal's FAMOUS Plastic Chutney Recipe I बंगाल की मशहूर प्लास्टिक चटनी I Pankaj Bhadouria

Don’t get confused by the name Plastic Chutney!
Plastic Chutney is a traditional Bengali dish that is made with raw papaya.
Raw papaya is sliced or grated and then blanched, then cooked in a sugar syrup that turns it translucent and starts resembling plastic bits. Hence the name Plastic Chutney.
Every Bengali family has their own recipe of Plastic Chutney. I am sharing my grandmother’s recipe here.
This Plastic Chutney is a must at all festivals, weddings and special occasions in Bengali households.
It is sweet, tangy and flavourful with a slight chewy and syrupy texture.

Plastic Chutney
Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 3-4

Ingredients:
750g Raw Papaya
10-12 Cashew Nut
3 tbsp Lemon Juice
1 cup Sugar
½ tsp. Salt
½ Tsp. Panch Phoron
1 tbsp Mustard Oil

Method:
Peel the raw papaya and discard the seeds. Slice it into thin slices.
Blanch the papaya slices in boiling water for 1 minute.
Drain and set aside.
Heat 1 tbsp oil in a pan. lightly fry the cashewnuts and set aside.
Add ½ tsp panch phoran to the oil and add the sugar and water.
Bring to a boil and add the blanched papaya slices.
Cook for 8-10 minutes till the papaya is cooked and translucent.
Next, add the chopped raw papaya and a pinch of salt, giving it a gentle mix.
Cover the pan with a lid and cook on low heat for 10 minutes.
Once the papaya pieces become soft, add salt to taste, lemon juice and mix well.
Cook for 3-4 minutes. Add cashew nuts and remove from heat.
Cool and store refrigerated.
