So, how to grow lettuce or any other greens at home?
Next time you buy lettuce at grocery store, cut and save the bottom 2 inches of the stem.
Put the stem in a cup of water (about half the depth of the stem).
Place it somewhere with enough natural light or under plant grow light.
Change water in bowl every 1 to 2 days.
Watch your lettuce regrow in 3 weeks.
Rinse and repeat.

This video is for entertainment purpose where I used Chinese mustard greens (gai choy) to film how greens grow rapidly in fresh water and light. You can do the same with lettuce, green onions and many other leafy vegetables. Chinese mustard greens, or jiè cài (芥菜) in Mandarin and gai choy in Cantonese, have been cultivated for centuries. Just like lettuce, you can regrow these greens over and over using just water and a container at home. You can use this method to grow an infinite supply of greens. Once you buy them at the grocery store you may never have to buy them again. Theoretically, at least!
