炒龍躉肉

材料:
龍躉肉400克
雞脾菇120克
韭黃少許
薑10片
乾蔥頭4個
蒜頭4粒
辣椒仔1隻
蛋白1隻
蔥1條

處理:
1. 龍躉肉,打鱗,輕手清水洗乾淨,擎乾水,廚紙索乾。
2. 龍躉肉,切大舊。
3. 龍躉肉,加入調味料:
a. 胡椒粉少許
b. 鹽少許
撈勻。
4. 雞蛋,只要蛋白,加入魚肉內,撈勻。
5. 韭黃,清水洗乾淨,切段。
6. 雞髀菇,清水洗乾淨,切片。
7. 薑,去皮,切片。
8. 乾蔥頭,去皮,1開2。
9. 蒜頭,去皮,切碎。
10. 辣椒仔,清水洗乾淨,去椗,切粒。
11. 蔥,洗乾淨,切段。

烹調:
1. 大火在鑊內燒熱油2湯匙。
2. 龍躉肉,加入生粉1湯匙,撈勻,放鑊內煎。
3. 轉中慢火,繼續煎魚。
4. 乾蔥頭及薑片,放鑊中心炸。
5. 魚的一面已煎金黃色,反轉繼續煎。
6. 加入蒜蓉在鑊中心爆香。
7. 加入雞髀菇在中間,煎至軟身。
8. 加入調味料:
a. 雞汁1茶匙
b. 糖1茶匙
9. 轉大火,加入蔥及韭黃,炒勻。
10. 加入適量生粉芡。
11. 加入一半的辣椒粒,炒勻。
12. 完成,上碟,灑上餘下的辣椒粒。
13. 可享用。

Stir frying giant grouper fillet

Ingredients:
Giant grouper fillet 400g
King oyster mushrooms 120g
Chives little
Ginger 10 slices
Shallots 4 Nos.
Garlics 4 Nos.
Chili 1 No.
Egg white 1 No.
Green onion 1 No.

Preparation:
1. The grouper, get it scaled. Rinse with tap water lightly. Drain. Dry with kitchen towels.
2. The grouper, cut in big pieces.
3. The grouper, add seasoning:
a. Pepper little
b. Salt little
Mix well.
4. The egg, only the egg white is needed. Add in the fish, mix well.
5. Chives, rinse with tap water. Cut in lengths.
6. Mushrooms, rinse with tap water. Get it sliced.
7. Ginger, get it peeled and sliced.
8. Shallots, get it peeled. Divide each into 2 shares.
9. Garlics, get them peeled. Chop well.
10. Chili, rinse with tap water. Cut the anchor. Dice in cubes.
11. Green onion, rinse with tap water. Cut in lengths .

Steps:
1. Heat up 2 tbsp of oil at high flame in wok.
2. The grouper, add in 1 tbsp of tapioca starch, mix well. Fry in the wok.
3. Turn to medium-low flame and continue frying.
4. Shallots and ginger, deep fry at centre of wok.
5. One side of the fish has been fried into golden yellow, flip over and continue frying.
6. Add in garlics at the centre of the wok, fry well.
7. Add in the mushrooms at the centre of the wok, fry until they turn soft.
8. Add seasoning:
a. Chicken sauce 1 tsp
b. Sugar 1 tsp
9. Turn to high flame. Add in green onion and chives, fry well.
10. Add in appropriate amount of tapioca sauce.
11. Add in half of the chili cubes, fry well.
12. Complete. Put on plate. Put the remaining chili cubes on top.
13. Serve.
