Check out this easy way to preserve strawberries!
They will be shelf stable until opened. Reduce waste and make a delicious strawberry vinegar with the strawberry tops- perfect for those summer salads!
I reference the Ball Blue Book Guide to Preserving 37th edition. I am at sea level, so half pints process for 15 minutes at a rolling boil.

Equipment needed:
Water bath or large pot
Jar tongs
Plastic knife and funnel
Kitchen towels
10 Half pint mason jars with lids and rings
1 Quart mason jar for vinegar.


Supplies needed:
Approx 6lbs strawberries (8cups once cut and mashed)
6 cups sugar
Optional:
White wine vinegar if using the strawberry tops!
