Talk about health as a dessert …. Dried dates, nuts and sesame make for a crunchy, flavourful dessert. You may also have it as a post-workout snack to give boost of energy!
KHARIK LADDOO
Ingredients
2 cups dried dates (kharik) powder
½ cup white sesame seeds
½ cup grated dried coconut
2 tbsps + ¼ cup ghee
15-20 almonds
15-20 cashew nuts
15-20 pistachios
1 tbsp gum resin (gond)
¾ cup chopped jaggery
½ tsp green cardamom powder
Method
1. Heat a nonstick pan. Add white sesame seeds and dry roast for a minute. Transfer in a plate and set aside to cool down.
2. Dry roast dried coconut in the same pan till golden brown. Transfer in a plate and set aside to cool down.
3. Heat 2 tbsps ghee in a nonstick pan. Add almonds and sauté till golden brown. Transfer in a plate and set aside to cool down.
4. Add cashew nuts and pistachios in the same pan and roast till golden brown. Transfer in a plate and set aside to cool down.
5. Add gum resin in the same pan and sauté till puffed. Transfer in a plate and set aside to cool down.
6. Heat remaining ghee in the same pan. Add dried dates powder and sauté for 4-5 minutes on medium heat. Allow to cool.
7. Transfer sesame seeds, coconut, nuts and gond and grind coarsely. Add the roasted dates and mix well.
8. Heat a nonstick pan. Add jaggery, 2 tbsps water and cook till the syrup reaches soft ball consistency.
9. Add this to the ground mixture, add green cardamom powder and mix well. Divide the mixture into equal portion and shape into laddoos.
10. Serve.
