Resep Ayam Tim Jahe (untuk 4-5 porsi)

Bahan kuah:
1 ekor ayam kampung
2 sdt garam
1 sdt kaldu / penyedap, opsional
1 sdm gula
½ sdt merica
1 batang daun bawang
1-2 jempol jahe, iris
1 sdm arak masak putih / sake, opsional

Bahan minyak bawang putih jahe:
93 gr bawang putih, haluskan
70 gr jahe, haluskan
½ sdm minyak wijen
60 ml minyak

Pelengkap:
Kecap asin
Cabai merah, iris tipis
Daun bawang besar, iris tipis
Daun ketumbar
Timun, kupas, potong

Langkah:
1. Keringkan ayam, lalu campurkan garam, gula, kaldu, merica dengan arak masak, aduk rata
2. Marinasi ayam mulai dari bagian dalam ayam kemudian masukkan daun bawang dan jahe
3. Bungkus ayam dengan kertas roti lalu bungkus kembali dengan aluminium foil, kukus selama 60-80 menit di api besar
4. Untuk saus jahe, panaskan minyak, masukkan bawang putih, masak hingga wangi kemudian kecilkan api, masukkan jahe, masak hingga kering
5. Matikan api, tambahkan minyak wijen, aduk rata
6. Keluarkan ayam dari kukusan, sisihkan ekstrak ayam ke dalam mangkuk lalu potong-potong ayam
7. Tambahkan sedikit kecap asin ke dalam ekstrak ayam, aduk
8. Ayam jahe siap disajikan

Steamed Ginger Chicken (yield 6-7 servings)

Marinating ingredients:
1 pc free-range chicken
2 tsp salt
1 tsp stock powder / flavor enhancer, optional
1 tbsp sugar
½ tsp pepper
1 pc green onions
1-2 thumb ginger, sliced
1 tbsp white cooking wine / sake, optional

Garlic Ginger Oil ingredients:
93 g garlic, minced
70 g ginger, grated
½ tbsp sesame oil
60 ml oil

Condiments:
Soy sauce
Red chili, thinly sliced
Large green onion, thinly sliced
Cilantro
Cucumber, peeled and sliced

Steps:
1. Pat the chicken dry. Mix the salt, sugar, stock powder, pepper with cooking wine and stir.
2. Marinate the chicken starting from the cavity. Add the green onions and ginger into the cavity.
3. Wrap the chicken with baking paper, then wrap again with aluminum foil. Steam for 60-80 minutes on high heat.
4. For the Garlic Ginger Oil, heat the oil and add the garlic in. Cook until fragrant, then lower the heat and add the ginger in. Cook until reduced.
5. Turn the heat off. Add sesame oil in and mix well.
6. Get the chicken out of the steamer. Set aside the chicken juice in a bowl, then slice the chicken.
7. Add soy sauce to the chicken juice. Stir.
8. Ginger Chicken is ready to serve.
