LENTIL & HAM HOUGH SOUP RECIPE

Ham hock or ham hough? Whatever way you say or spell it, it’s delicious!

Ingredients
300g lentils
1 x ham hock
4 x ham stock cubes
3 x litres of water
1/2 x turnip
2 x carrots
2 x onions
2 x bay leaves
large handful parsley

Method
1. Rinse out lentils with water, until the water is clear after rinsing (you can leave them soaking for 30 mins then rinse if you want but not necessary)
2. Grate turnip and carrots, finely chop onion and add to large soup pot on top of ham hock
3. Add bay leaves, stock & lentils to soup pot with veg
4. Cook on medium heat for approx 2 - 2.5 hours
5. After 2 hours, remove the ham hock from the pot to shred it (continue soup simmering whilst you do this) and add chopped parsley for last 30 mins.
6. Allow ham hock to cool slightly then remove fat, strip meat from bone in chunks then break up into shreds with hands/fingers or chop into pieces
7. Use potato masher (yep, that trusty utensil!) to mash up your soup to achieve desired consistency
8. Add shredded ham hock back into soup pot and season as necessary
