Kandil Simidi: Turkish Savory Cookie! – Heavenly & Melt-in-Your-Mouth Taste the magic of Kandil Simidi – a crunchy, melt-in-your-mouth Turkish savory cookie! 🍪✨ Made with sesame seeds, mahleb, and clarified butter, this special snack is baked for meaningful days in Türkiye. It’s buttery, crispy, and so easy to make at home! If you love savory snacks and homemade treats, you have to try this! 💛

Kandil Simidi

180 g butter or 150 g clarified butter
300 g all purpose flour, 2 + ⅖ cups, bread flour works good as well
3 heaped teaspoons of savory yogurt
1,5 teaspoons of vinegar, any vinegar works great
½ teaspoon of mahaleb cherry seeds, pounded in a mortar
10 g baking powder, 1 small sachet
½ teaspoon of salt
1 egg
1 tablespoon of molasses
2-3 handfuls of roasted sesame seeds
2 teaspoons nigella seeds
1 pinch sugar

· To make the clarified butter, melt the butter in a small saucepan over low heat. The milk will rise to the top as it heats. Remove the foam that accumulates on top with a spoon and then pour the oil into a bowl. Do not remove the white milky part that remains at the bottom. Your plain butter is ready.
· Knead flour, clarified butter, yogurt, vinegar, baking powder, salt, granulated sugar and mahaleb in a mortar in a large bowl until it is just combined and soft.
· Divide the dough into 20 equal pieces of 25 grams each. Knead each small piece with your slightly oiled hand, flatten it with the palm of your hand and make strips that are about 12-15 cm long.
· Bring the two ends of each roll together and make a ring. For the bald ones, place the simits on a tray, brush them with egg yolk and sprinkle nigella seeds. You can sprinkle more if you wish. Place them on a paper lined baking tray.
· For the sesame seed, spread roasted sesame and some nigella seeds on a tray. Beat the egg white with molasses. Coat the simits first in the molasses egg and then in the sesame seeds and place them on the tray.
· You can bake them on the middle shelf of a 180 C (356F) oven, top and bottom, until golden, for 18-22 minutes. If you like them darker you can bake on the upper shelf for another couple of minutes.
