Recipes:

Breakfast Banana muffins (makes 6):
2 ripe bananas
75g frozen berries
1/2 lemon juice
1.5 tablespoons of almond milk
1 tablespoon of maple syrup
1.5 tablespoons of olive oil
100g plain flour
35g coconut sugar
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
- Mix all dry ingredients, then mix in wet and then add berries. Top with a 3rd banana sliced.

Vegan Caesar salad:
Dressing (this makes quite a lot):
100g cashews
100ml almond milk
1 tsp mustard
1/2 lemon juice
1 tablespoon garlic granules (can use roasted fresh)
Salt and pepper to taste
Salad:
125g kale
1/2 tin of chickpeas (roasted for 15 minutes)
Spinkle of paprika
1/2 Avocado
Drizzle of olive oil
