So this is a test of edge retention of my Spydiechef Spyderco with Lc200n steel that's been sharpened to a .1 micron edge using my KME Sharpening System. I do work for KME so this is the fun part of my job for sure. This knife was sharpened using a progression from our 140 grit Gold Series diamond stone up to the 1500 GS diamond. Then followed with all six diamond Lapping films from 9 micron to .1 micron. The final touch is a .1 micron CBN emulsions over our Kangaroo strop.

This test really blew me away. I've owned and sharpened H1 from Spyderco , but it's got nothing on Lc200n. This new steel which is almost impossible to rust is now my favorite steel. It sure seems to like a high polish as well. If you notice I stay on the front half of the blade for all of the paper cutting, and abuse on the bamboo cutting board. The main purpose was to try to simulate a chef actually using the blade for an extended period. I actually edited out nearly 8 minutes of cutting paracord, because my arm was in view, and it was just too slow of a challenge for the KME edge on Lc200n from Spyderco haha.
