খেজুর রস আর রসের তৈরি পিঠা উৎসব চলবে শীত জুড়ে। খেজুরের রস দিয়ে ভাপা পিঠা, পুলি পিঠা, পাটিশাপ্টা, রস পিঠাসহ বিভিন্ন ধরনের পিঠা তৈরি হয়। তবে বর্তমানে আধুনিক যুগে এই ঐতিহ্য হারিয়ে যাচ্ছে।
পরিবেশ বান্ধব এই খেজুর গাছ সরকারি-বেসরকারি ভাবে রোপন করে দারিদ্রপীড়িত কুড়িগ্রাম জেলার ভাঙ্গন এবং অর্থনৈতিক ভাবে এগিয়ে নিতে বিশেষ ভূমিকা রাখাবে বলে অভিমত বিশেষজ্ঞদের।
