You will need
•300g cannoli shells or digestive biscuits
•175g Melted butter
1 tbspn chocolate powder

For the filling:
•800g rikotta
•200g icing sugar
•200ml Elmlea blu/ panna / whipping cream
•Chocolate chips
•10g gelatina powder mixed with ▪️¼cup warm water

For top:
•some nuts
Chocolate chips

Method :
Crush the cannoli shells, add the butter and the chocolate powder. Mix well then make a leveled base in a dish and refrigerate 15 minutes.

Use hand mixer, beat the ricotta with the icing sugar until creamy. Add the gelatin, stir well.

In another bowl, beat the whipping cream/Double cream/panna until it is firmly set and then pour the mixture into the ricotta bowl and add the Chocolate chips and continue to stir with a spoon .

Place the mixture on the base of the biscuit and top with the nuts and chocolate chips.
Leave over night in fridge. Enjoy
