Ingredients:

3 lbs salmon
2 onions, diced
1 head of garlic, minced
A handful of cilantro, chopped
40-50 Thai chilli peppers (adjust according to desired spice level)
Salt
2 Tbsp black pepper, ground
2 Tbsp cumin

Instructions:

1. Start by placing your fish pieces on a large oiled baking sheet. Sprinkle with salt and black pepper. Cook in the oven until it’s just barely done.
2. After taking your fish out of the oven, break them all apart in a large pan. Add in oil along with cumin, garlic, cilantro, and chilli peppers. Also taste for salt at this point. Saute for a few minutes.
3. Turn your heat off and add in your onions. It’s important that you don’t add them in when the heat is still on so that they don’t produce water.
4. Done! It’s ready to stuff into your sambusa wraps, enjoy!
