Brinjal Rice Recipe👇

Ingredients:
1 tsp oil
3 red chillies
1/4 cup shredded coconut
1 tsp channa dal
1 tsp urad dal
1/2 tsp pepper
1/2 tsp cumin seeds
1/2 tsp coriander seeds
1/4 tsp asafoetida
1/4 tsp methi seeds
2 pieces cinnamon sticks
1/2 tsp red chilli powder
1/2 tsp turmeric powder
Few curry leaves
2 tbsp gingerly oil
2 tbsp peanuts
1/2 tbsp cashew nuts
1/2 tsp mustard seeds
3 green chillies
1 cup sliced brinjal (eggplant)
1/4 cup tamarind extract
Cooked white rice
Finely chopped coriander leaves

Instructions:

Heat a pan and add 1 tsp of oil.
Add 3 red chillies and fry until aromatic. Transfer to a mixer jar.
In the same pan, add 1/4 cup shredded coconut and fry until golden brown. Transfer to the same mixer jar.
In the same pan, add 1 tsp channa dal, 1 tsp urad dal, 1/2 tsp pepper, 1/2 tsp cumin seeds, 1/2 tsp coriander seeds, 1/4 tsp asafoetida, 1/4 tsp methi seeds, 2 pieces cinnamon sticks, 1/2 tsp red chilli powder, 1/2 tsp turmeric powder, and a few curry leaves. Fry everything until aromatic.
Transfer everything to the mixer jar and grind to a coarse powder.
Heat a pan and add 2 tbsp gingerly oil.
Once the oil heats up, add 2 tbsp peanuts and 1/2 tbsp cashew nuts. Fry until golden brown and set aside.
In the same pan, add 1/2 tsp mustard seeds. Once they splutter, add 3 green chillies and 1 cup sliced brinjal. Fry until the brinjal is half cooked.
Add 1/4 cup tamarind extract and cook until the brinjal becomes soft.
Add the ground masala and cook until it reaches a thick consistency.
Add cooked white rice, the fried peanuts and cashews, and finely chopped coriander leaves. Mix everything well.
Serve the brinjal rice hot along with some papads.
