Refreshing Meals for Hot Summer Days

Light, refreshing meals come in clutch for hot days. Today I'm going to share 3 of our family dinners, using leftover chicken that the entire family will is sure to love. Chicken salad, chicken caesar salad, and a lettuce salad featuring chicken, bacon, apples and more will provide a lot of flexibility, while keeping the oven turned off!

Refrigerator Cucumber Pickles:
8 C thinly sliced cucumbers
3/4 T Redmonds Real Salt
2 medium onions, thinly sliced
1 cup sugar
3 t celery salt
3 t mustard seed
1 cup white vinegar plus more to top off

Mix and store in fridge overnight for best flavor.
