East Asian tofu burrito!

I loveeeee this book because it’s vegetarian (with the exception of egg) and so so fun!
This recipe was originally made with egg, which I’ve replaced with silken tofu! ❤️

The tofu burrito is hearty, healthy and DELISH!

Makes 4-5

1 tablespoon soy sauce
1 tablespoon water
1 teaspoon granulated sugar
1 teaspoon cornstarch
1 teaspoon sesame oil
¼ teaspoon salt

Filling
300g silken tofu
¼ teaspoon salt
Dash of sesame oil
Freshly ground black pepper
3 tablespoons vegetable oil, divided
1 tablespoon minced garlic
1 tablespoon peeled and minced fresh ginger
Pinch of turmeric

4 cups (400 g) shredded cabbage
2 medium carrots, shredded
1 capsicum
4 green onions, green parts cut into

Chilli paste
3-4 dried chillies, soaked in hot water
Salt
Juice of 1/2 lemon
Pinch or 2 of sugar

Stir fry the vegetables together with the sauce and keep aside.

do the same with the silken tofu and the aromats mentioned with it.

heat a tortilla and apply the chilli paste and place lettuce leaves along with veggies and tofu and wrap it up and enjoy!
