A NOTE on salt in cake recipes

Salt in cake recipes enhances the flavours, it makes them deep and complex. It also brings out and balances the sweetness.
But I know people that don’t like the flavour of chocolate or caramel when salt is added. They prefer its regular “plain” taste. I guess that they are a very small exception that proves the rule.
That’s why sometimes when I bake chocolate cakes, I say/write that the pinch of salt is optional. As a general rule, it’s not. But if you are baking for someone else it’s a good idea to get information about your guest’s preferences.


INGREDIENTS

2 eggs
100 ml sunflower oil (or any flavourless vegetable oil of your preference)
200 ml milk (you can also use plant-based milk)
1 tsp vanilla extract
a pinch of salt
180 - 200 g white sugar
200 g all-purpose flour
60 g cocoa powder
8 - 10 g baking powder
100 g dark chocolate chunks (optional)

Bake in preheated conventional oven at 180 °C - 350 °F for 40-50 minutes. Each oven is different. Insert a toothpick into the center of the cake and if it comes out clean the cake is done.

Many people consider cracked tops an imperfection, or not proper for a formal occasion.
If you don't like the cracked top, let the cake cool upside down.
Or you can try to hide the cracks by adding some decoration e.g. fresh fruit, chocolate chips, mint leaves, and so on.

There are actually many reasons that can create cracks:
the oven is too hot
there is too much baking powder
the pan is too small
