Khandesh is a region in northern Maharashtra. This Maharashtrian chicken curry is very popular there for its unique flavor and spicy taste. This Indian chicken curry goes very well with chapati, bhakri and plain rice.

Ingredients:

For Chicken:
1/2 kg Chicken pieces
1/2 tsp Salt
1/4th tsp Turmeric Powder
3 pieces of Bay Leaf
1 Onion, finely chopped
1 tsp Gram Flour (besan)
Coriander Leaves
3 Cups Hot Water

For Masala paste:
Oil
cloves
fennel seeds
masala cardamom & green cardamom
cumin seeds
cinnamon
star anise
black pepper
grated dry coconut
garlic
ginger
onion
spicy dry red chillies & kashmiri dry red chillies (soaked)
water

Method:

To make the masala paste in a pan heat some oil. Add the whole spices and mix everything for a minute. Then add grated dry coconut and mix everything till it changes color.
Transfer this mixture on a plate.
In the same pan heat some oil. Saute the onions till golden brown.
Transfer them on a plate.
First grind the coconut mixture. Then to it add red chillies, garlic, ginger. Grind everything by adding little water.
To it add the brown onions. Grind everything well. Masala paste is ready.
In a pan heat some oil. Add bay leaf and saute finely chopped onions.
Then add gram flour and saute well.
Then add the masala paste and mix well. Keep stirring till the masala releases oil.
Then add the marinated chicken. Mix well.
Add hot water and salt to taste. Give a good stir.
Cover it and let the chicken cook for 20 minutes.
Add coriander leaves. Switch off the flame.
Khandeshi Chicken Curry is ready to be served.
