In this video, I’m sharing my favourite recipe for German Apple Cake with Caramel Frosting. This cake is so moist, packed with apples, and flavoured with cinnamon, creating the perfect combination of flavours. The caramel frosting takes it to the next level—it’s absolutely delicious.

It’s an easy recipe that I’ve made countless times over the years, both at home and at work, and it’s always a hit. Whether you use fresh apples or pie apples, this cake turns out beautifully every time. Recipe: German Apple Cake with Caramel Frosting

Ingredients

For the Cake:
2 eggs
¾ cup (180 ml) neutral oil
2 cups (440 g) sugar (white or brown) reduce to 1 ½ cups/330 g if preferred
2 cups (300 g) plain flour
1 teaspoon bi-carb soda (baking soda)
2 heaped teaspoons cinnamon
1 teaspoon vanilla essence
½ teaspoon salt
1 large tin, 800g Pie Apples or 5-6 cups peeled and chopped apples

For the Caramel Frosting:
½ cup (113 g) butter
1 cup (220 g) brown sugar
¼ cup (60 ml) milk
2 cups icing sugar, sifted

Instructions

To Make the Cake:
Preheat your oven to 180°C (no fan) or 160°C (fan).
Crack the eggs into a bowl, add the oil, and whisk together until emulsified.
Stir in the sugar and mix well.
Add the flour, bi-carb soda, cinnamon, vanilla essence, and salt. Mix until combined—the batter will be thick.
Fold in the apples.
Pour the batter into a greased and lined pan. The recipe suggests 9 x 13-inch (23 x 33 cm). Smooth the top.
Bake for 50–65 minutes, covering with baking paper or foil for the last 15 minutes if browning too quickly. A skewer inserted should come out clean.
Cool in the tin, then transfer to a wire rack to cool completely.

To Make the Caramel Frosting:
Place the butter in a small saucepan over medium heat. Once nearly melted, add the brown sugar. Stir until dissolved, then bring to a boil, stirring constantly for about 2 minutes (count to 120).

Carefully add the milk, stir well, and bring back to a boil for a moment. Remove from heat and let the caramel cool completely.

Transfer the cooled caramel to a bowl and gradually add the sifted icing sugar, a couple of spoonful's at a time, beating well after each addition.

Once the cake is completely cool, place it on a serving dish and spread the frosting over the top. Use a knife dipped in hot water to smooth the surface if needed.

Storage Tips:
This cake keeps well in the fridge for up to 6 days.
Both the cake and frosting freeze beautifully.
