200g Lady's Finger / Okra / Bhindi
3 tbsp Gram Flour (Besan)
2 tbsp Corn Flour
½ tsp Turmeric Powder
2 tbsp Red Chilli Powder
1 tsp Black Pepper Powder
1 tsp Dry Mango Powder (Amchur)
1 tsp Chaat Masala
½ tsp Asafoetida (Hing)
¾ tsp Salt (adjust to taste)
A dash of Water (for binding)
Oil for shallow or deep frying

How to Make Crispy Kurkuri Bhindi?

1. In a mixing bowl, combine besan, corn flour, turmeric, red chilli powder, pepper powder, amchur, chaat masala, hing, and salt. Mix thoroughly to form a dry spice coating—ensure no lumps remain.
2. Trim the top and bottom of the okra. Slice each okra lengthwise into four, stopping ¾ of the way to keep them intact.
3. Add the slit okra to the spice mix and coat them well. Sprinkle a little water—just enough to help the coating stick. Mix gently and marinate for 15–30 minutes.
4. Heat oil in a pan. Add the marinated bhindi and cook on medium heat. Avoid stirring for the first 3 minutes to retain the coating.
5. Once the coating starts turning golden brown, gently flip and fry evenly.
6. Strain the fried bhindi, transfer to a bowl, and serve hot!
