The Indian palate covers a bewildering range and variety of cuisines and ingredients, and yet amidst all this, there are some flavours and spices that are essentially desi. Prominent editor, writer, columnist and food critic, Vir Sanghvi, and iconic culinary author and restaurateur, Asma Khan, engage in a scintillating discussion on the many tastes, textures, and modes of Indian cooking. Asma Khan is the owner of the Darjeeling Express restaurant in London’s Soho. Her recently published Ammu, consisting of over a hundred recipes with easy-to-follow instructions, celebrates the power of food to comfort and heal, restore and nourish. Vir Sanghvi, author of The Indian Pantry, writes regularly on ingredients in our kitchens and global culinary experiences in his food column ‘Rude Food’ in the Hindustan Times. Rude Food: The Collected Food Writings of Vir Sanghvi is an inspired and wonderfully witty collection of his essays on food and drink, replete with gastronomic tips and secrets. Together, they talk about their works and the diversity of Indian food.

Vir Sanghvi became editor of Bombay magazine at twenty-two, making him the youngest editor in the history of Indian journalism. He went on to edit Imprint and Sunday, then India’s largest-selling weekly newsmagazine. He has been both Editor and Editorial Director of the Hindustan Times, and continued as columnist and advisor. His television career includes award-winning shows on the Star TV Network, NDTV and CNN TV 18. He also has a significant parallel career as India’s leading food and travel writer.

Asma Khan is one of the UK and India’s brightest culinary stars. An award-winning restaurateur, best-selling cookbook author, and the founder of London’s famed Darjeeling Express restaurant. She is the UN World Food Programme's Chef Advocate, a distinguished presence on the Mayor of London's Business Advisory Board and an Honorary Fellow at Queen's College, Oxford University. Khan is the first British chef to be profiled on Netflix’s Emmy- nominated Chef’s Table and the first chef to be featured on Vogue’s list of 25 most influential women. Her magnetic persona has also graced the campaigns of leading brands WhatsApp, Levi's, and National Geographic to name a few - while her presence has left an indelible mark on television series like Celebrity MasterChef and the Emmy-winning Top Chef in America. Her latest cookbook Ammu was named Times Book of the Year and was featured on GQ's list of best cookbooks.
