Today’s recipe is my Salad Series’s episode 5 - Sprouted Moong and potato salad.

This recipe is my style of potato salad: Tangy with lemon and mustard, crunchy with sprouted moong beans, bright with coriander and red onion.

This is a hearty nutritious salad made with boiled potatoes, sprouted mung beans, onion, tomato, green chillies, coriander leaves and some sweet and tangy spices. It is a super easy recipe that gathers in no time.

Ingredients:

1. 2 boiled potatoes
2. 1 cup sprouted moong, boiled
3. 1 red onion, chopped
4. 1 tomato, chopped
5. 2 green chillies, chopped
6. 1/4 tsp yellow mustard powder
7. 1/4 tsp roasted cumin powder
8. 1/2 tsp salt
9. 1/2 tsp black salt
10. 1/2 tsp chaat masala
11. 1 tsp lemon juice
12. 1 tsp sesame oil
13. Fresh coriander leaves for garnishing

Make a dressing with sesame oil, lemon juice, mustard powder, Salt, black salt, cumin powder, chaat masala and red chilli. And pour over potato, and moong. Add in fresh coriander leaves. And it’s done :)
