INGREDIENTS:

(Makes 12 Gyozas)

WRAPPERS:

Flour (140g)
Hot Water (80g)

FILLING:

Chicken Mince (0.5 kg)
Onion (1)
Garlic (4 cloves)
Ginger (1 knob)
Bread (1 slice)
Stock Cube (1)
Salt (0.5 tbsp)
Black Pepper (2 tsp)
Paprika (1 tsp)

DIPPING SAUCE:

Soy Sauce (2 tbsp)
Vinegar (2 tbsp)
Sugar/Honey (1 tbsp)
Chilli Flakes (1 pinch)

DIRECTIONS:

WRAPPERS:

1. Mix your flour and your water in a bowl until it comes together. Then use your hands to knead it in the bowl for a minute until a rough dough ball forms.
2. Take your dough out onto a lightly floured counter and knead it pushing it forward and pulling it backward for around 5 minutes or until the surface is totally smooth and plump.
3. Place your dough into an airtight container and let it rest for 30 minutes.
4. Remove it from the container, divide it into 15 g pieces, and flatten it with the palm of your hand. Flour the dough and your surface generously and begin to roll out the pieces into round circular disks. Make sure to keep them very thin.
5. Stack your wrappers onto each other by putting some flour in between.

FILLING:

1. Cut up your vegetables and saute your onions for a minute with some salt and oil.
2. Add the bread to a food processor along with your onions and the stock cube and blitz until a crumbly mixture forms.
3. Add your chicken to a large bowl and then add your bread mixture, garlic, ginger, salt, pepper, and paprika and give it a good mix with your hands.

DIPPING SAUCE:

1. Combine all the ingredients in a small bowl.
2. Mix well to incorporate.

ASSEMBLY:

1. Take a wrapper and put a tbsp of your filling inside and spread it.
2. Put some water on the outside of the wrapper, close it like a book, and then press out all the air using the back of your hand.
3. Pick up your gyoza, and crinkle the edges to make it nicer looking and to add more texture.

COOKING:

1. Steam these guys in a metal steamer for 15 minutes.
2. Shallow fry in an inch of oil after steaming to add more crunch and flavor.
