Parries and reversals (used interchangeably) are great tools that can be used to stop offense and prevent opponents from abusing strings.
These videos demonstrate all strings that can be interrupted with parries/reversals but just because you can doesn't mean you always should.
Strings that end with a launch punishable hit or high attack I would not advise to utilize parries, unless they option select an opponent's
mix-ups and/or you are most comfortable using them. Another thing to be mindful of is using parries (especially Sabakis) against delayable
strings.
To keep these videos simple, I only covered left/right punches/kicks that can be parried. Only a few characters such as Geese and Leroy can
parry elbows, knees, shoulders, etc. so I don't cover them in this video.

Differences between parries and reversals:
Parry - Parries normally require an input to be inputted upon success. These cannot be chickened. Sabakis are moves with parry functions
which normally don't require extra inputs. In contrast to normal parries, they put the character at risk of counter hits.
Reversal - Reversals can be chickened and don't require additional inputs to counter opponents.
