Super Quick, easy and delicious Chicken and Potato Dinner 😋
Ingredients:

4 large potatoes
50ml vegetable oil
½ tsp salt
1 tsp mixed herbs
½ tsp turmeric (for color)
2 chicken breasts
2 tbsp Cajun seasoning
1 tsp mixed herbs

4 tbsp olive oil
½ red pepper, chopped
Handful of green beans, chopped
3 cloves garlic, minced
Fresh parsley or coriander, chopped
4 tbsp butter
Instructions:

Prepare the Potatoes:

Peel and cut 4 large potatoes into very small pieces.
Heat 50ml of vegetable oil in a large pan over low heat.
Add the potatoes to the pan and season with ½ tsp salt, 1 tsp mixed herbs, and ½ tsp turmeric.
Mix well to coat the potatoes evenly.
Cover the pan with a lid and cook on low heat for around 10 minutes until the potatoes are soft inside.
Prepare the Chicken:

While the potatoes are cooking, cut 2 chicken breasts into small pieces.
In a bowl, season the chicken with 2 tbsp Cajun seasoning, 1 tsp mixed herbs, ½ tsp turmeric, and 4 tbsp olive oil.
Mix well to coat the chicken pieces evenly.
Heat a separate pan over medium-high heat and add the seasoned chicken.
Fry for about 5 minutes, stirring occasionally.
Add Vegetables:

Add ½ chopped red pepper and a handful of chopped green beans to the pan with the chicken.
Fry for an additional 3 minutes, stirring frequently.
Crisp the Potatoes:

After 10 minutes, check the potatoes; they should be soft inside.
Remove the lid and increase the heat to medium-high.
Fry the potatoes without the lid for around 3 minutes, until they are crispy and golden brown.
Add Final Touches:

Add 3 minced garlic cloves fresh parsley or coriander and 4 tbsp of butter to the chicken
Fry for another minute, stirring well.
