Cherry tomatoes arranged like petals, silky egg whites around them, golden yolks in the centre, and fresh coriander to finish.

Steps:

Lightly butter a non-stick pan and warm over low heat.

Slice cherry tomatoes in half and arrange them cut-side down in a ring, leaving the centre empty. Cook for ~30 seconds.

Pour the egg whites into the pan, filling the space around the tomatoes but keeping the centre of the ring clear.

Gently add the egg yolks to the open centre.

Cover and steam on low heat for ~30 seconds, until the whites begin to set.

Uncover and place fresh coriander sprigs so they fan out from the centre, making the tomatoes look like flower petals.

Season with salt and black pepper, then serve.

Tip: Keep the flame low so the whites stay tender and don’t brown.
