Dhaba Style - Baingan Masala | Masaledar Baingan ki Sabji | Bharwa Baingan | Authentic Aroma

Written Recipe for Dhaba Style - Baingan Masala

Ingredients for Baingan Masala:

4 tbsp roasted Gram Flour (Besan)
3 tbsp roasted Peanuts Crushed
2 tbsp crushed Coriander Seeds
1 tbsp crushed Fennel Seeds
2 tbsp Kashmiri Red Chilli Powder
1 tbsp Coriander Powder
Cilantro
¼ cup Shredded Coconut

Ingredients for Gravy:

7- 8 Small Eggplants
¼ cup Oil
1 tsp Carom Seeds (Ajwain)
2 Dry Red Chilli
1 Star Anise
2 Bay Leaf
9 - 10 Curry Leaves
1 tbsp crushed Green Chilli
1 tbsp crushed Ginger
1 cup Tomato Puree
1 tbsp Kashmiri Red Chilli Powder
Sea Salt to Taste
3 cup Hot water
2 tbsp Sugar
Juice of ½ Lime
2 tbsp Clarified Butter (Ghee)
Cilantro

Method:
1. Cut the eggplants as shown in the video
2. To make the masala mix Besan, Crushed Peanuts, Crushed Sesame seeds, Crushed Coriander seeds, crushed fennel seeds, Kashmiri red chili powder, coriander powder, cilantro, shredded coconut
3. In a pan add oil
4. Once the oil is hot add carom seeds (ajwain), dry red chilli, star anise, curry leaves, crushed green chilli, crushed ginger. Cook on medium flame
5. To that add turmeric powder, kashmiri red chilli powder and mix well. 6.Add 3 cups of Hot water
7. Add sea salt to taste, cilantro and cut eggplant to the water
8. Boil everything until the eggplants cook, check it using a knife or a toothpick
9. Add 1 cup tomato puree, sugar and lime juice. Mix everything well
10. After that add the prepared masala to the gravy. Mix everything carefully without breaking the eggplants
11. Cook everything on medium flame until all masala incorporates
12. Lastly add 2 tbsp clarified butter (Ghee) and Garnish with Cilantro

Serve Hot with Roti, Rotla or Bhakri
