Hi everyone, Happy New Year 2022. Wish you all happy, healthy new year! Like many of you, one of my new year’s goal is to eat healthy and have more energy to be the best I can be. So this year I would like to share more healthy Korean recipes and hope that you can join me in my journey in cooking healthy Korean food. Korean BBQ and kimchi have become very popular nowadays. But Korean food is more than those popular dishes. There are hundreds of vegetable side dishes that go well with many Korean food you eat. I will also share vegetarian and vegan options as well. Hope you can try this delicious pancake filled with vegetables.


Ingredients:

1 oz chives, chopped
1 oz minari, Korean dropwort, chopped
15 perilla leaves, sliced thinly
12 small shrimps, chopped (optional if vegan)
4 red chili peppers, chopped
3 green chili peppers, chopped


1 cup Korean pancake mix
1/2 cup Korean frying mix
1 1/2 cup water
1/2 tsp fish sauce (use salt or Yondu sauce if vegan)


Dipping sauce:
1 tbsp low sodium soy sauce
1 tbsp vinegar
1/4 tsp Korean red chili pepper flakes


*Soak the chili peppers for 10 minutes in cold water for milder taste.
*You can substitute shrimp with mushroom if you are vegan.
*Yondu is a vegan sauce which you can purchase on Amazon or at any Korean market.
