Learn how to make tasty and healthy French Beans Curry at home! This simple and quick Indian curry recipe is perfect for everyday meals. Ingredients:
For blanching french beans:
French beans 250 gms
Water as required
Salt ½ tsp
For onion-ginger-garlic paste:
Onion 2 pc
Ginger 1 inch
Garlic 5-6 cloves
Water as required
For curd mixture:
Curd 1 cup
Turmeric powder ½ tsp
Red chilli powder 1 tsp
Coriander powder 1 tsp
Jeera powder ½ tsp
For gravy:
Oil 2 tbsp
Jeera 1 tsp
Dry red chilli 1 pc
Onion-ginger-garlic paste
Curd mixture
Blanched french beans 2 cups
Salt ½ tsp
Water as required
Green chilli slits 2-3 pcs
For namak & mirch paratha:
Wheat flour dough
Ghee as required
Salt a pinch
Ajwain a pinch
Green chilli chopped ½ tsp
Method:
Step 1: Prepare Onion-Ginger-Garlic Paste
Roughly chop onions, ginger, and garlic. In a pan, add a little water and cook them together until soft.
Once cooled, blend into a smooth paste.
This forms the base of the curry and enhances the body and aroma of the dish.
Step 2: Prepare Curd Masala
In a bowl, whisk curd until smooth.
Add turmeric powder, red chilli powder, coriander powder, and jeera powder.
Mix well and set aside. This spiced curd mix brings creaminess and tang to the sabji.
Step 3: Blanch French Beans
Trim the ends and chop the french beans into small pieces.
Boil water in a pan, add a little salt, and blanch the beans for 3–4 minutes until slightly tender but still bright green.
Drain and set aside.
Step 4: Cook the Base Masala
Heat oil in a kadhai. Add jeera and one dry red chilli.
Let them sizzle and release aroma.
Now add the onion-ginger-garlic paste.
Sauté on medium heat until the paste turns golden brown and the raw smell disappears.
Step 5: Add the Curd Mixture
Lower the heat to prevent curd from curdling.
Slowly add the spiced curd mixture, stirring continuously.
Cook on low flame till oil begins to separate and the masala thickens.
This takes about 5–6 minutes. Add a little water if needed to avoid sticking.
Step 6: Add Blanched Beans
Add the blanched french beans and mix to coat them evenly with the masala.
Add salt and a splash of water.
Cover and cook on low flame for 7–8 minutes so the beans absorb the flavors.
Toss in slit green chillies in the last 2 minutes for extra heat.
Step 7: Prepare Namak-Mirchi Paratha
Take wheat flour dough and roll out a medium-thick roti.
Spread a few drops of ghee, sprinkle a pinch of salt, ajwain, and finely chopped green chilli.
Fold, roll again, and cook on a hot tawa with ghee until golden and crisp on both sides.
Step 8: Serve
Serve the hot French Beans ki Sabji with freshly made namak-mirchi paratha.
The creamy, spicy beans pair beautifully with the crisp, spicy paratha, making this a simple yet soul-satisfying Indian meal.
Add a bowl of plain curd or pickle if desired.
