The key word here is easy

Are these the absolute best crackers you can make with your discard? No.

Are they the prettiest? Also, no.

Will they suffice for a super easy snack and quick way to use up a bunch of discard? Definitely.

These crackers tend to be soft in the middle or burnt on the edges. You can absolutely take crackers off the outside edges and bake the middle crackers longer if you perform the optional 10 minute score. You could also reduce your oven's heat to 250 F and bake for an extra 30-60 minutes if they just aren't hitting the spot for you on crunchiness.

Like I said, here’s to an easy discard recipe. It’s not going to be perfect, but it will suffice for using up your discard and creating a quick and fun snack.

For plain or seasoned crackers:

1 cup sourdough discard
2 tbsp oil or melted butter
1/2 tsp salt
1/4 tsp course or flake salt (for topping)
OPTIONAL: your favorite toppings, such as rosemary or Everything Bagel seasoning

1) Whisk the discard, oil or melted butter, and 1/2 tsp of salt in a small bowl.
2) Spread out as thinly as possible on a baking sheet.
3) Top with 1/4 tsp course or flake salt.
4) Optionally, top with your favorite toppings.
5) Bake at 325 F for 45-50 minutes, until golden brown around the edges.
You can score the crackers with a bench scraper around the 10 minute mark if you like (1:15). The only purpose of this is beauty, to help the crackers break nicely. Otherwise, just roughly break them with your hands after the crackers have finished baking and cooling.

1 1/2 cups (6 oz weight) shredded cheese (I used cheddar and pepper jack)

1) Whisk the discard, oil or melted butter, and salt in a small bowl.
2) Fold in the shredded cheese.
3) Spread out as thinly as possible on a baking sheet.
4) Bake at 325 F for 45-50 minutes, until golden brown around the edges.
