Paletas (Mexican Popsicles) are a Mexican snack for hot days. They’re either non-dairy (water-based) or cream-based. Here’s four common Paleta flavors using my mom’s restaurant style recipe for Coconut, Strawberry, Nuts (Nuez), and Mango con Chamoy. The flavor options are really endless once you know the base. RECIPE INGREDIENTS & MEASUREMENTS:

Cream-based Paletas: Yields 15 (5 of each flavor)
1 cup Heavy cream
1 can Sweetened condensed milk
1 cup (253g) Mexican Sour Cream - Crema is the Mexican version of French crème fraîche
3/4 tsp (~1.5g) Cellulose Gum OPTIONAL: https://amzn.to/2ucW0kM
1 cup (100g) crushed Pecans
1 cup (90g) unsweetened shredded coconut
1 cup (200g) strawberries
*1 tsp. (5ml) Strawberry Concentrate
*1.5 tsp. (8ml) Coconut Concentrate
*1 tsp. (5ml) Nut Concentrate


Water-based Paletas: Yields 5
2 Ripe mangos
1/2 cup water
1/4 cup (50g) sugar
2 tbsp. (30m) lime juice

SUBSTITUTIONS:
• Sugar: Simple syrup or Agave nectar may be used instead.
• Flavor Concentrates: If you would like to enhance the flavor, color, and aroma of the paleta you may substitute the flavor concentrate with a tsp. of any flavor extract you prefer.
• Paleta Flavors: Any preferred flavorings may be used instead in either paleta bases. For example, crushed oreas go great with the cream base, while lime, tamarind, and even cucumber flavorings make great water-based paletas. Any seasonal fruit can be turned into a paleta!
• Mexican Cream: crème fraîche may be used instead or regular sour cream.
• Heavy cream: whipping cream, whole milk, half and half, or evaporated milk may be used instead.

Notes:
Cream paletas can be a bit difficult to unmold from plastic molds, but it helps to slightly warm the mold with your hands a bit and wiggle the paleta out of the mold slowly so it keeps it shape. Stainless steel molds are a bit easier to work with, but are not required.

** Don’t dip in the warm water bath for more than 10 seconds to unmold as they can melt quickly.

*** Once removed from mold, freeze again for 30 minutes before consuming as this will help the paletas/popsicles hold their shape when consumed.

**** Cellulose gum is not required at all for making paletas at home. It simply prevents ice crystals from forming in the paletas so they can be stored longer in the freezer and maintain their integrity.

***** To store paletas place in individual plastic sandwich bags and keep in freezer. If made with cellulose gum they will keep anywhere from 3 – 4 weeks. Those made without cellulose gum will keep their integrity for up to a week if stored in bags.
